They helped us find excursions that fit us! Joseph and Gavin are the best! Full of interesting, historical knowledge of the area. And Roy the chef is off the charts! He cooked meals that I will think about for a long time. And notable mention Mr. Hemingway the sweetest hotel cat that we became very attached to. The hotel itself is beautiful and historic while also very modern and comfortable. The surrounding area is beautiful as well, with a garden and river which you can hear as soon as you go outside. The area is surrounded by olive groves and lavender. 10/10 experience. Durante todo el proceso de reserva hasta el día de llegada han sido muy atentos, facilitándome los menús por adelantado para tenerlos elegidos previamente al ser un hotel pequeño o ofreciéndome hacer un pre-cheking para agilizar las gestiones. El menú era muy variado y apeticible, con productos de la tierra, opciones veganas y postres caseros. Por un problema de salud sobrevenido el mismo día 25 tuvimos que anular la reserva. Me comuniqué con ellos a través de whatsap, fueron muy atentos y comprensivos con la situación y no solo no me cobraron la parte pendiente de pago -tal como figura en sus normas de reserva- sino que me pidieron datos para hacer el reembolso y han hecho el seguimiento de que se haya efectuado. The hotel seamlessly blends rustic charm with modern comforts. Nestled within the property are eight separate stone villas. The main building showcasing remnants of the original mill equipment. For those who need to stay connected, Starlink and Movistar internet services are available. From the moment we arrived, we were warmly welcomed by the dedicated staff. Manager Victor expertly catered to our diverse group, curating a perfect itinerary that included winery tours, olive oil production demonstrations, and a fascinating goat cheese-making experience. He even thoughtfully organized a surprise birthday party for one of our children. Chef Roy delighted our palates with delicious meals, expertly catering to both adult and children's preferences. Martha and Christina provided attentive service throughout our stay, ensuring we felt comfortable and well-cared for. A special mention goes to the incredible owner, Joseph Shortell, and his partner, Lara. Their dedication to ensuring we had the best possible experience was truly heartwarming. Our crew was eager to watch football on New Year's Day, and Joseph and Lara went above and beyond to make it happen. They even purchased a brand new TV for us! When we realized we needed an HDMI cable to connect it, they quickly procured one last minute from the local bar (El Buen Avío – a must-visit with stunning views near the Castello de Trevejo). These extra touches made us feel incredibly special and truly demonstrated their commitment to creating unforgettable memories for their guests. Joseph's mission is to showcase the hidden charm of the Extremadura region. Whether it's experiencing a live performance by the traditional dance troupe, enjoying the melodies of classical guitar players, exploring the region's excellent wineries, or witnessing the breathtaking spectacle of a large group of bulls running through the fields, Joseph and his team are dedicated to sharing the wonders of their adopted region with the world. The team at Aqua et Oleum creates an incredibly memorable experience in one of the most natural and remote destinations in all of Spain. This beautiful 8 room lifestyle hotel was the inspired creation of Interior Designer Joseph Shortell. What once functioned as a mill providing olive oil for the surrounding area now provides a peaceful respite for those looking to slow down and absorb all this region has to offer. Incredible food preparations from Chef Roy kept us coming back all 5 days. There was no need to look elsewhere. His preparations were so delicious. I’m not a breakfast guy, but I made a point to enjoy his breakfast spread. Wow! Great way to start the day. The manager, Victor is a gem! He is TOP NOTCH and incredibly kind and communicative. Christina was lovely and made all our meals really special. Seriously, they all go above and beyond to serve well. Additionally, this location has SO much to offer. You are surrounded and immersed by so many incredible things. It’s all about olives over here. Olive oil and some excellent wine. Ok, olive oil, wine and a little history. Actually, 700+ years of history including the invasion and occupation of the Visigoths, Moors, Christians, Spanish empire, Napoleonic France and now modern Spain. Set in the region of Extremadura Spain, the AEO team has transformed an olive mill into a beautifully appointed hotel and restaurant whose staff professionally serve all your wants and needs. Accommodations and meals were great. The staff arranged for tours of olive mills, bull farms, goat farms and excursions to all the attractions for which this region is known. Todo estaba buenisimo pero tengo que resaltar un atún a la plancha con verduritas salteadas que estaba increíble y un bacalao al horno que es de los mejores que he comido en mi vida. We had a terrific visit to the Spanish countryside. This restored olive oil mill turned hotel earned every star of the 4 Star rating. It was like staying in someone’s home with all the privacy you want. The hospitality, the food, the comfort and the beauty of Aqua Et Oleum is the perfect mix for a memorable vacation. 8 unique guest rooms with luxury linens & beds were an added plus. This place should be on all travelers bucket list. It is a restored old olive oil mill, turned into an 8 room boutique hotel. The owner, Joseph Shortell is a master of design and it is reflected in the tasteful preservation of the old combined with comfort. June, 2024Verified Inmejorable Puede que sea el mejor alojamiento donde me he hospedado. Fui con mi pareja y fue todo un acierto. Se respira una calma y una quietud que hace que te evadas del mundanal ruido de la rutina. Disponen de servicio de restaurante donde el chef te ofrece una atención muy personalizada. El desayuno variado y muy rico. Quizá, y por ponerle alguna pega se echa de menos el café recién hecho. Pero no es suficiente para emborronar lo que fue una escapada ideal. El entorno que lo rodea es muy bucólico y la atención de Joseph, excepcional. Sin duda un lugar para repetir más de una vez.
