This beautiful 8 room lifestyle hotel was the inspired creation of Interior Designer Joseph Shortell. What once functioned as a mill providing olive oil for the surrounding area now provides a peaceful respite for those looking to slow down and absorb all this region has to offer. Incredible food preparations from Chef Roy kept us coming back all 5 days. There was no need to look elsewhere. His preparations were so delicious. I’m not a breakfast guy, but I made a point to enjoy his breakfast spread. Wow! Great way to start the day. The manager, Victor is a gem! He is TOP NOTCH and incredibly kind and communicative. Christina was lovely and made all our meals really special. Seriously, they all go above and beyond to serve well. Additionally, this location has SO much to offer. You are surrounded and immersed by such incredible history, it will take us many visits to enjoy it all. And we can’t wait ;-)A. R. Sedeño16 October 2024Aqua et Oleum is located in the outskirts of the town of Villamiel. This former olive oil mill has been converted to a small 8 room gem of a hotel. This was our base for a 3 day leisure stay of the area. The setting is extremely relaxing with it's views and the creek running through the rear of the property. We were in room #3 which is large and comfortable. Joseph, the owner, has managed to make a great transformation creating an environment to make his guests feel at home. Victor was always attentive to anything we needed. He was in communication with us while we were out with regard to meals when we returned being most places were closed at the time we wanted to eat and Chef Roy can cook delicious meals! Everyone and I mean everyone went out of their way making sure we were at our maximum comfort. Joseph, Victor, Roy, Christina, Patricia and all those behind the scene, thank you for making this a fabulous stay.Matthew McGrath9 October 2024This is a very special place in a wild and little visited part of Spain. A ruined olive mill that has been transformed into a luxury boutique hotel. Large suites with very comfortable beds. A swimming pool with a view of the ruined Castillo de Trevejo is one of the highlights. What makes the place special is the owner Joe, the manager Victor and their warm and friendly staff. The staff is very accommodating and they have a world class chef preparing the meals. Nos han enseñado las habitaciones y las distintas estancias y es una maravilla. No puedo más que recomendarlo al 100% y en cuanto podamos volveremos. Actually, 700+ years of history including the invasion and occupation of the Visigoths, Moors, Christians, Spanish empire, Napoleonic France and now modern Spain. Set in the region of Extremadura Spain, the AEO team has transformed an olive mill into a beautifully appointed hotel and restaurant whose staff professionally serve all your wants and needs. Accommodations and meals were great. The staff arranged for tours of olive mills, bull farms, goat farms and excursions to all the attractions for which this region is known. The community is so close in this region, that many of your interactions are up close and personal. From start to finish, this exceeded our expectations - Bravo! Cynthia1. November, 2024Verified Unique hotel in a beautiful, historic part of Spain. Aqua et Oleum is an extraordinary place, set in a unique region of Spain that is not in the usual tourist agenda. The hotel is beautifully designed, surrounded by gorgeous countryside, charming pueblos and friendly people. The food, thanks to chef Roy, was outstanding and the staff made us feel at home and part of the family. History is everywhere with a view of an old castle from the patio and the stars are brilliant on a clear night. I went with a group of artists and the material to paint was unlimited. RconR6. August, 2024Verified Spectacular We were on food, celebrating my father's birthday and the spectacular food, the very familiar treatment and behaved with my father wonderfully, since I could not eat everything and prepared something special for him, they sang happy birthday and remembering old moments, since my parents worked there, when it was a mill and they were just children, both the cook and the waitress, they listened lovingly to their stories, it was very nice, I recommend it 100%. Everything was delicious but I have to highlight a grilled tuna with sautéed vegetables that was incredible and a baked cod that is one of the best I have ever eaten in my life. The restaurant, a renovated old oil mill with a lot of charm and a beautiful garden full of lavenders and rosemary. We had a terrific visit to the Spanish countryside. This restored olive oil mill turned hotel earned every star of the 4 Star rating. It was like staying in someone’s home with all the privacy you want. The hospitality, the food, the comfort and the beauty of Aqua Et Oleum is the perfect mix for a memorable vacation. 8 unique guest rooms with luxury linens & beds were an added plus. June, 2024Verified Unbeatable It may be the best accommodation I have ever stayed in. I went with my partner and it was a success. There is a calm and stillness that makes you escape from the madding crowd of routine. They have a restaurant service where the chef offers you very personalized attention. The breakfast was varied and very rich. Maybe, and to put it in some way, you miss freshly brewed coffee. But it's not enough to tarnish what was an ideal getaway. The surrounding environment is very bucolic and Joseph's attention is exceptional. Without a doubt a place to repeat more than once.
